For a 10 lb goose or turkey
- 2 oz butter
- 6 oz streaky bacon, rinded and chopped
- 1 medium onion, chopped
- 1 small tin sweetcorn, drained
- 12 oz fresh white breadcrumbs
- 2 tbsp chopped parsley
- Salt and pepper
- 1 egg, beaten
Heat the butter and sauté the bacon and onion for a few minutes.
Stir this mixture into the breadcrumbs, sweetcorn and parsley, season and mix well.
Add enough beaten egg to bind the mixture.
