Ingredients

For a 10 lb goose or turkey

  1. 2 oz butter
  2. 2 medium onions, finely chopped
  3. 12 oz fresh white breadcrumbs
  4. 4 oz dried ready to eat bing cherries
  5. 4-6 sage leaves, finely chopped
  6. 1 tbsp chopped parsley
  7. ½ lemon’s grated rind
  8. Salt and pepper
  9. 1 egg, beaten

Method

  1. Fry the onions in the butter until soft
  2. Add to the rest of the ingredients.
